Humans can only survive about three weeks without food. By developing a knowledge of wild edibles you can find food virtually anywhere. Plants can often provide the most readily available source of nutrition in the wilderness.
This entry level course will find students exploring our 352 acre site identifying, harvesting and sampling wild edibles. Processing and preparation will be covered and students will be encouraged to try the wild edibles they have harvested. Depending on the season, edibles such as Lamb’s Quarters, Cattails, Leeks, Sting Nettle, Mushrooms, various nuts and berries and many, many more will be found.
